These crackers are so quick and easy to make. They are a perfect afternoon or evening snack and much tastier than shop bought crackers. I adore the combination of rosemary and sea salt but you can experiment with other flavours too, such as black pepper or fennel seeds - I’m tempted to make a sweet version with lavender and a sugar dusting.
250g plain flour
130ml cold water
2 tbsp extra virgin olive oil
1 tbsp rosemary
Salt to taste
Olive oil spray
Mix together the flour, rosemary and salt
Add the water and olive oil
Mix to a dough and then roll out on a well floured board. You want to roll it as thin as possible, a few millimetres.
Using a knife (or pizza cutter), cut into rectangles, then transfer to a lined baking sheet.
Sprinkle with a little more salt and spray with a little olive oil
Bake in a preheated oven at 200℃ for around 12 minutes, turning the crackers halfway through baking. You want them crispy and starting to brown.
Allow to cool before eating.

Lemon & Elderflower Fizz
250ml fresh lemon juice (for us, that was approx 7 lemons)
Zest from the lemons
4 elderflower heads
250g granulated sugar
250ml water
Sparkling water to serve
Heat the water and sugar until the sugar dissolves
Add the lemon juice, zest and elderflower heads
Bring to the boil and then simmer for around 20 minutes.
Strain the liquid into a sterilised bottle and allow to cool.
To make the final drink, pour 25ml of the cordial into a wine glass and top with sparkling water.
It’s officially Summer and ideally we’d be enjoying our crackers and drink while sitting outdoors in the sunshine. However, it’s raining and Summer currently seems like a myth, so you’re more likely to find us sitting around the stove.
